Crab and Shrimp Cakes
Ingredients:
1/2 cup mayonnaise
2 eggs, beaten
2 tablespoons, Dijon mustard
1/2 pound cooked shrimp, diced
1/2 pound crab meat, diced or shredded
1 shallot
1 teaspoon salt
1/8 teaspoon cayenne pepper
4 ounces Breton Crackers, crushed
Preparation:
Combine mayonnaise, eggs, and mustard. Add shallot, salt, and cayenne. Gently fold in shrimp, crabmeat, and Breton Crackers. Shape into ovals and sauté for 12 minutes or until brown.
