Sesame Shrimp Cakes with Ginger Soy Vinaigrette

Sesame Shrimp Cakes with Ginger Soy Vinaigrette

Ingredients:

2 tablespoons ginger, minced
2 tablespoons garlic, minced
1 teaspoon salt
3 cups cooked shrimp, minced
1/4 cup cilantro, finely chopped
4 eggs
ground chili or pepper flakes, to taste
white pepper, to taste
1 box Sesame Breton Crackers, ground

Preparation:

Heat oil in a pan and sauté garlic and ginger 2-3 minutes. Add chili and shrimp and sauté until shrimp is cooked though. Place mixture in a mixing bowl and add 2 eggs, mix well then add 1/2 ground Breton Crackers. Beat remaining eggs. Shape shrimp mixture into silver-dollar-sized cakes. Coat cakes with egg then cover with ground Breton Crackers. Heat additional oil in pan. Fry cakes on both sides until golden brown; drain on paper towels. Serve with Ginger Soy Vinaigrette.
