Apple Currant Chutney

Apple Currant Chutney

Ingredients:

2 apples, diced
1/4 cup currants
2 teaspoons butter
1 shallot, finely diced
1 tablespoon lemon zest
1/2 tablespoon cinnamon
1 teaspoon freshly ground nutmeg
1/2 cup red wine vinegar
1/4 cup brown sugar
Breton Crackers 

Preparation:

Sweat shallots in two teaspoons of butter until translucent. Add the diced apples, currants, brown sugar, vinegar, lemon zest and spices. Simmer over low heat until liquid is reduced by half. Cool. Serve with Breton Crackers.

Helpful hints:

Spread crackers with goat cheese and then dollop with chutney.
