Chef’s Corner : Crispy Baguettes Tomato & Basil Bruschetta Topper
Ingredients:
1 green onion chopped
1 minced garlic clove
2 cups (500 mL) chopped plum tomatoes
1/4 tsp (1 mL) dried basil
2 tbsp (25 mL) olive oil
to taste salt and pepper
1/3 cup (75 mL) grated Parmesan or Asiago cheese (optional)
garnish chopped parsley (optional)
Preparation:
• Mix all ingredients except cheese in a bowl.
• When ready to serve, place a spoonful of bruschetta topper on Tomato & Basil Crispy Baguettes.
• Garnish with chopped parsley if desired.
• Heated option: Sprinkle each Baguette with cheese and heat until warm. Make 24-30 toasts.
