Red Pepper & Pesto Spread
Ingredients:
1 8-ounce package cream cheese, softened
1/4 cup sour cream
3 cloves of roasted garlic
1/2 cup of roasted red peppers
3 tablespoons basil pesto
1/4 cup pine nuts, toasted
rosemary sprigs
Vivant or Breton Crackers
Preparation:
Mix cream cheese and sour cream in food processor. Remove half of mixture and set aside. Add garlic and half of the red peppers to food processor with creamed mixtures and pulse until smooth, remove and set aside. Put remaining creamed mixture in food processor with basil pesto and pulse until smooth. Alternate spoonfuls of each mixture into pastry bag with star tip. Pipe onto crackers. Mixture should come out partially green and partially red. Slice remaining peppers into thin strips and arrange onto crackers with pine nuts and rosemary.
Helpful hints:
To save time, use roasted garlic paste instead of roasting garlic cloves. Use paste according to the directions on package. Also, for a heartier appetizer, garnish each cracker with 1/4 of artichoke heart. For Valentine's Day, garnish crackers with thin pepper strips in shape of a heart.
