Tree O' Brie

Ingredients:

3 wheels of Brie: small, medium, and large
approximately 1 cup good fruit preserve (any flavor)
seasonal fruit
1 star fruit (yellow with slightly brown ridges)
Dare Crackers

Preparation:

Slice wheels of chilled Brie horizontally by laying brie flat on surface, and with knife parallel to cutting board, cut through the middle, leaving skins on. Starting with the largest Brie, spread preserves in the middle and place on cake stand or serving dish. Repeat with medium and then small wheels of Brie, stacking in order on top of large Brie. Cut a piece of star fruit to top the tree. Drizzle leftover preserves as desired. Keep chilled until ready to serve. Decorate with seasonal fruit and stacks of Dare Crackers. Serve with a sharp-edged spreader and a variety of Dare Crackers.

Helpful hints:

Use Cranberry Chutney instead of preserves. Or, try a different flavor preserve for each layer. For example: blueberry, raspberry and peach. Rule of thumb: the more expensive the Brie, the softer and creamier the insides are. For your tree to last at room temperature, a firmer, and usually less expensive, Brie is recommended. Keep chilled until ready to serve.
