Tuscan Bean Spread
Ingredients:
4 cans white Great Northern Beans
1/2 cup olive oil
1/4 cup fresh basil leaves
1 tablespoon chopped garlic
1 tablespoon fresh lemon juice
tomato slices (optional)
whole basil leaves (optional)
salt and pepper to taste
Vinta or Breton Crackers
Preparation:
Drain and rinse beans. In a food processor, add beans, garlic, basil, and lemon juice. Puree until smooth. Slowly add oil while pulsating processor until creamy. Season with salt and pepper to taste. Serve in a bowl with crackers on side.
Helpful hints:
Dollop bean spread on individual crackers and top with cherry tomato halves. To serve as an appetizer, place spread in small ramekins with crackers and carrot slices on the side.
