Warm Oriental Salad

Ingredients:

1 pound chicken breast, cut in strips
1/2 cup snow peas
1/2 cup sprouts
1/2 cup red peppers
1/2 cup water chestnuts
1/2 cup bamboo shoots
1/2 cup baby corn ears
1/2 cup sliced carrots
crushed red pepper to taste
Sesame Breton or Breton Crackers

Marinade ingredients:

1/2 cup peanut or sesame oil
3 tablespoons soy sauce
1 teaspoon chopped garlic
1 teaspoon chopped scallions
1/2 teaspoon ginger

Preparation:

Mix together marinade ingredients and heat in skillet. Add chicken and sauté until golden. Toss in vegetables and stir until everything is coated. Serve warm with Sesame Breton.

Helpful hints:

Refrigerate the Oriental Salad and serve chilled for a tasty alternative. Garnish with coarsely broken Sesame Breton before serving. Also, try adding 1/2 cup fresh (or canned and drained) pineapple chunks while cooking.
