Greek Salad

Greek Salad

Ingredients:

mixed greens including baby spinach
cherry tomatoes, halved
red onion, thinly sliced
greek olives
crumbled feta cheese
Reduced Fat & Sodium Breton Crackers

Dressing Ingredients:

2 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1/4 teaspoon each, salt and pepper

Preparation:

Whisk dressing ingredients in a bowl, and then quickly toss with salad greens. Add halved cherry tomatoes, onion, and olives. Top salad with crumbled feta cheese. Serve with Breton Crackers.

Helpful hints:

Make an entrée by adding slices of grilled chicken or slices of ham.
