Oriental Summer Salad
Ingredients:
1 small head romaine lettuce (about 6 cups, thinly sliced to 1/4-inch thick)
2 cups thinly sliced (about 1/8-inch thick) cabbage (red, green, or both)
6 scallions thinly sliced
1/2 cup roasted peanuts
Sesame Breton or Vinta Crackers
Add-Ins (use any or all):
6-ounce can medium shrimp (or fresh-grilled shrimp)
6 ounces thinly sliced snow peas
1 large red bell pepper thinly sliced
1/4 cup toasted sesame seeds
3-ounce can mandarin oranges
Ginger Sesame Dressing:
1/2 cup vegetable oil
1/4 cup rice vinegar
2 tablespoons sesame oil
1 1/2 tablespoons peeled, minced, fresh ginger root
2 teaspoons soy sauce
salt and pepper to taste
Preparation:
Combine dressing ingredients together and chill. Toss fresh salad ingredients. Drizzle salad with Ginger Sesame Dressing. Serve on individual plates. Top each salad with approximately three crushed crackers. Serve crackers on the side. Makes about 6 individual salads.
Helpful hints:
Display the add-in items on a table and let your guests mix and match. Use chopsticks instead of forks for extra flair.
