Roquefort & Grape Croutons
Ingredients:
1/2 pound seedless red or green grapes (large grapes work better)
mixed greens (enough for 4-6 servings)
3 ounces cream cheese, softened
3 ounces Roquefort or blue cheese
1 tablespoon heavy cream
Sesame Breton or Breton Crackers
Preparation:
Wash and dry grapes and greens thoroughly. Arrange greens on individual salad plates. Take grapes off stems; set aside. Crush 8-10 crackers to make crumbs; place into shallow bowl. Combine the softened cheeses and cream in a separate shallow bowl, mixing until smooth. Dip grapes in mixture and stir to coat gently with hand. Roll grapes one by one into cracker crumbs and place on mixed greens. Refrigerate until ready to serve. Serve with vinaigrette dressing and Dare Crackers.
Helpful hints:
For an easy summer meal, add grilled, sliced chicken and increase portion size. Serve with Sesame Breton. For a more formal presentation, encircle greens with grapes. Or, add Roquefort & Grape Croutons to an hors d'oeuvres table by serving in a bowl, skewered with toothpicks.
