Sesame Tofu Fry

Ingredients:

1 pound firm or extra firm tofu, drained
2 tablespoons green onion, chopped
1 egg, beaten
2 tablespoons high quality soy sauce
oil for frying
4 ounces Breton Crackers

Preparation:

Crush the Breton Crackers and place in a pie plate or wide bowl. Cut the drained tofu into triangles about 1/4 inch thick and pat dry with paper towels. Heat oil in large skillet. Dip the slices first in the egg mixture and then into the wafer crumbs. Fry in hot oil until crisp and dark golden. Serve with soy sauce and sesame oil for dipping.

Helpful hints:

Add a splash of color to the plate by serving with steamed carrot flowers.
