Chili Con Queso
Ingredients:
2 tablespoons butter or margarine
1 clove garlic, minced
8-ounce package fresh mushrooms, sliced 1/4-inch thick
1 green pepper, chopped
1 jalapeno pepper, seeded and finely chopped
10 3/4-ounce can cream of mushroom soup
8-ounce package Monterey Jack cheese, grated
8-ounce package medium sharp Cheddar cheese
8-ounce package jalapeno pepper processed cheese food
Breton Crackers or Cheddar Minis
Preparation:
In medium saucepan melt butter; add garlic, mushrooms, green pepper and jalapeno pepper. Cook over medium heat, stirring occasionally, until vegetables are tender (4 to 5 minutes). Stir in remaining ingredients. Continue cooking, stirring often, until cheese is melted (7 to 8 minutes). Serve warm in crock with Breton Crackers. Garnish with jalapeno pepper and cilantro or scallions.
Helpful hints:
Prepare this cheese dip ahead and heat before serving, or serve at room temperature.
