Luscious Lox
Ingredients:
8 ounces cream cheese, softened
3 ounces smoked salmon
2 tablespoons heavy cream
1/2 teaspoon lemon juice
1 seedless cucumber, sliced thin
1/2 teaspoon horseradish (or to taste)
fresh dill
pepper to taste
Cabaret or Breton Crackers
Preparation:
In blender or food processor, whip cream cheese. Add smoked salmon, heavy cream, lemon juice, horseradish, and pepper. Process until smooth. Place into a crock or serving bowl. Serve on a platter with cucumber and dill garnish and Cabaret, Breton, or any delicious Dare Crackers.
Helpful hints:
To present salmon in decorative shapes, use metal cookie cutters. On a cookie sheet lined with wax paper, spoon salmon and place another piece of wax paper on top. Roll with a rolling pin until 1/2-inch thick. Freeze on cookie sheet for 5 minutes. Spray the insides of the cookie cutters with non-stick cooking spray. Remove top wax paper from salmon spread and use cookie cutters to cut out shapes. For bridal showers or wedding, use all heart shapes. Try stars for an evening theme. Another attractive option is to top cracker with cucumber and dill, then pipe the salmon spread into a small floret on top of each cracker. Serve with capers and chopped red onion.
