Nicoise Nouveau
Ingredients:
chopped canned tuna
sliced tomatoes
any variety of deli-style olives
anchovies
capers
green beans
hard-boiled eggs, halved
cooked red bliss potatoes, halved
mesclun lettuce mix
Breton or Reduced Fat & Salt Breton Crackers
Toss with fresh Vinaigrette Dressing.
Vinaigrette Dressing:
1/3 cup red wine vinegar
1/3 cup olive oil
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon minced garlic (optional)
salt and pepper to taste
Preparation:
Toss with fresh Vinaigrette Dressing.
