Prosciutto and Asparagus with Mustard Yogurt

Prosciutto and Asparagus with Mustard Yogurt

Ingredients:

1/2 cup plain yogurt
2 tablespoons Dijon mustard
2 teaspoons chopped fresh thyme
24 asparagus spears
24 slices Prosciutto ham
Vinta or Cabaret Crackers

Preparation:

In small bowl, stir together yogurt, mustard, and thyme. Pour into small crock. Blanch asparagus spears in boiling water for 1 to 2 minutes or until tender; rinse with cold water. Cut asparagus, roughly the length of the cracker. Place Prosciutto then asparagus spears on crackers. Garnish with sprig of thyme. Drizzle with mustard yogurt or serve on the side for guests to spoon on.

Serve this appetizer with a selection of Italian cheeses and full-bodied wine.
