Red Pepper Carrot Slaw

Red Pepper Carrot Slaw

Ingredients:

2 cups shredded carrots
1 cup red pepper, chopped fine
1/2 cup light sour cream
2 tablespoons chopped fresh dill
1 tablespoon white vinegar
1 teaspoon sugar
1/2 teaspoon ground pepper
salt to taste
Breton Crackers

Preparation:

In medium-sized bowl, mix together sour cream, vinegar, sugar, and ground pepper until blended. Fold in carrots, red pepper, and dill. Add salt to taste. To serve, dollop mixture on Breton Crackers. Garnish with red pepper and dill if desired.

Helpful hints:

Serve slaw in crock; provide guests with cocktail fork and plenty of Dare Crackers. For an alternative flavor, remove dill from recipe and add 1/4 cup finely chopped pineapple. For more texture, add chopped water chestnuts.
