Saffron Chile Mayonnaise*

Saffron Chile Mayonnaise

Ingredients:

2 egg yolks
pinch of saffron
1 tablespoon chili powder
1/4 teaspoon salt
1/4 teaspoon coarse ground pepper
1/4 teaspoon cumin
1 cup vegetable oil
1/4 cup fresh lime juice
Breton Crackers

Preparation:

In blender or food processor, combine all ingredients except oil, lime juice, and crackers. Cover; blend on high until thoroughly combined. With blender still running, take off cover and slowly add 1/2 cup oil, lime juice, and remaining 1/2 cup oil. Blend until thickened (1 to 2 minutes). Serve in crock with crackers. Garnish with lime slices.

Helpful hints:

Place small slices of turkey, ham, or assorted herbs and vegetables on crackers before topping with mayonnaise.
