Savory Lemon Mousse
Ingredients:
1 teaspoon unflavored gelatin
1/3 cup fresh lemon juice
zest of one lemon
3 tablespoons sugar
1 teaspoon minced fresh rosemary
1 teaspoon minced fresh sage
1 teaspoon minced fresh thyme
1 cup whipping cream, whipped
Breton Crackers
Preparation:
Sprinkle gelatin over one tablespoon of lemon juice. Let stand five minutes. In small saucepan combine gelatin mixture and remaining lemon juice. Cook over low heat, stirring constantly, until gelatin is dissolved. Add remaining ingredients except whipping cream and crackers; stir to dissolve sugar. Cool mixture. Fold lemon gelatin mixture into whipped cream. Serve with Breton Crackers. Garnish with sprigs of herbs.
Helpful hints:
Savory Lemon Mousse is perfect on a picnic. Place a slice of roasted chicken on cracker and dollop with Mousse. For parties, try serving mousse in several martini glasses.
