Spinach & Artichoke
Ingredients:
6-ounce jar marinated artichoke hearts, drained and chopped
1 clove garlic, minced
1 teaspoon zest of lemon
1 tablespoon fresh lemon juice
2/3 cup mayonnaise
1/4 teaspoon cayenne pepper
1/4 teaspoon white pepper
10-ounce package frozen spinach, chopped, thawed, and drained
Breton Crackers
Preparation:
In medium bowl, stir together all ingredients, except crackers and spinach. Slowly stir in spinach. Serve in crock with Breton Crackers.
Helpful hints:
Better when chilled and left to incorporate flavors. For individually prepared hors d'oeuvres, place a baby spinach leaf on cracker and either dollop or spoon spread on top. Add 1/4 artichoke for heartier appetizer.
