Stuffed Gouda Cheese
Ingredients:
14-ounce, or so, whole Gouda cheese in wax
1 teaspoon prepared yellow mustard
2 1/2 teaspoons red wine (or Worcestershire Sauce)
1 tablespoon fresh, chopped French tarragon (or 1 teaspoon dried, crushed)
scallion
Breton or Cabaret Crackers
Preparation:
Slice approximately 1 inch off the top of the cheese, cutting right through plastic wrap and wax. This should leave a fairly wide opening. Hollow out the Gouda cheese to about a 1/2-inch from wax shell using a sharp paring knife and a melon baller. Remove plastic wrap only (not wax). Process the removed cheese on smallest shredder blade. In large bowl, mix processed cheese, mustard, wine, and tarragon and toss lightly with a fork. Spoon mixture back into Gouda shell. There should be enough to fill the shell twice. Sprinkle top with sliced scallion. Serve as centerpiece with a variety of Dare Crackers.
Helpful hints:
Garnish with a fresh sprig of tarragon, sage, or parsley. Spread on Dare Crackers and top with a thin slice of tomato for a delicious taste and elegant look.
