Thai Tuna Bites
Ingredients:
3/4 ounce seasoned brown rice vinegar
1 tablespoon brown sugar
1/3 cup lime juice
2 teaspoons fish sauce
1 teaspoon sesame oil
1 small red chili pepper, finely chopped
5 ounces tuna steak, sliced lengthways into 1-inch pieces
sea salt to taste
2 cucumbers, thinly sliced
1 tablespoon fresh cilantro, finely chopped
1/4 cup of finely ground peanuts
1 tablespoon freshly grated ginger (or 1/2 teaspoon dry ginger)
12-15 Breton crackers
Preparation:
To make lime-chili dressing, combine vinegar, sugar, lime juice, ginger, fish sauce, sesame oil and chili in a small bowl. Stir well to incorporate ingredients, especially the sugar; set aside. Lightly grease frying pan. On high heat, sear tuna strips on all sides for 1 minute. Remove from the heat and season with sea salt. Cut the cooked tuna strips into small cubes. On each cracker, place a slice of cucumber and top with a tuna cube. In a separate bowl, mix cilantro, peanuts and lime-chili dressing. Garnish each tuna cube with a dollop of this mixture. Serve immediately.
Helpful hints:
Decorate the cucumbers to add a bit of visual appeal. Simply scrape the cucumber skin with a fork or peel, leaving strips of skin.
