Ingredients:

2 ounces per person of a variety of cheese in contrasting textures, tastes, and colors
sliced fruit and vegetables, optional garnish
selection of regional wines
Dare Crackers

Preparation:

When preparing a Cheese Course, create a theme by selecting cheeses and wines from a particular country or region. Serve cheese on a large cheese board or several smaller ones. Leave cheeses uncut to prevent them from drying out. Include utensils so guests can select their own portions. Allow wines to breathe before serving and serve in appropriate glass for optimal taste. Provide guests plenty of Dare Crackers.

Helpful hints:

Sparkling apple cider, white grape juice, even milk, are delicious non-alcoholic accompaniments to cheese. Bremner Wafers, voted the preferred cracker by sommeliers nationwide, are an especially good palate cleanser for wine.
