Baba Ghanoush with Soy Beans and Roasted Red Peppers
- 7 ounce (200 g) bag frozen shelled edamame beans
- 1 red pepper
- 1 cup (250 ml) prepared baba ganouche
- Boulangerie Grissol Baguettes
1. Prepare beans according to package instructions.
2. Place red pepper on the BBQ or indoor grill, on low to medium heat, turning until soft. Set aside and let cool.
3. Gently peel and cut peppers into thin strips. Spread prepared Baba Ghanoush over Baguettes and top with beans and red pepper strips.
