Chicken Caesar Salad

A hearty spin on the classic Caesar salad. A great lunch or light dinner option, we serve this with grilled chicken but you could substitute grilled shrimp, Tempeh, or thinly sliced flank steak.

Ingredients


  • 4 cups Romain lettuce (chopped, washed and patted dry).
  • ½ cup Caesar dressing (we like a generous amount, you can adjust to taste)
  • 2 Chicken breasts (grilled or baked), fully cooked and sliced into bite-size pieces
  • ¼ cup Parmesan cheese (grated)
  • 4 strips Bacon, pre-cooked and crumbled (optional)
  • 2-3 cups Boulangerie Grissol Classic Style Creamy Caesar Croutons

Preparation


  1. Add lettuce to a large bowl. Pour dressing over lettuce and toss until fully coated.
  2. Add Parmesan, bacon (if using) and croutons, lightly toss until combined.
  3. Place sliced chicken breast on-top of mixed salad.
  4. Serve and enjoy!

Pro Tip

Using a vegetable peeler, shave a little Parmesan cheese over the top for a rustic and flavourful touch.
