Ingredients


  • 200 g (half a 400-g pkg) Boulangerie Grissol® Melba Toast Sourdough
  • 1 can (540 mL) mixed beans, drained and rinsed
  • 3/4 cup (175 mL) pico de gallo
  • 1/2 cup (125 mL) cooked corn kernels
  • 2 tbsp (30 mL) olive oil
  • 1/2 tsp (2 mL) salt
  • 1/2 tsp (2 mL) black pepper

Preparation


  1. In medium bowl, stir together beans, pico de gallo, corn, oil, salt and pepper.
  2. Serve with toasts.

Pro Tip

For loaded salad, add also diced avocado, diced jarred roasted red pepper and finely chopped fresh cilantro.
