Ingredients

  • 16 Breton Original Crackers
  • 8 oz Brie cheese
  • 5 oz Cured salami or smoked sausage (like pepperoni, Genoa, kielbasa, etc.)
  • 1/2 pint Cherry tomatoes
  • 1/4 cup red pepper jelly or fresh honey
  • Mix of garnishes including: grapes (green and red), olives (pitted, black or green), nuts (shelled & lightly toasted almonds, cashews, walnuts or pecans), mini pickles, dried fruits (cranberries, cherries, apricots, dates), sprigs of fresh herbs (rosemary, thyme, sage)

Preparation

  1. Select your (food safe) board or platter to start. We like to use a larger wooden cutting board or charcuterie board, which you can find at a home or kitchen store.
  2. Place your cheese in the centre, cut a few small wedges and lay them out along with a cheese knife.
  3. Add a small bowl with red pepper jelly or fresh honey, along with a little spoon for guest to top their cheese and Breton crackers.
  4. Add your salami, cured or smoked meat to the board. Depending on your preference, you can place a whole salami and pre-cut a few slices, or use a mix of pre-sliced meats from your local deli.
  5. Add your Breton crackers, fanning them out around the board.
  6. Fill the board with additional toppings and pairings like: cherry tomatoes, nuts, olives, mini pickles, dried and fresh fruits (apricots, dried cherries, dates, grapes, sliced pears, cut figs, etc.)
  7. Finally, garnish with a few sprigs of fresh rosemary or thyme, tucked around the board for a little pop of green.

Pro Tip

A mix of different crackers are a great option to create both a plentiful look and provide variety for your guests.  Consider including Breton Gluten Free crackers for those that may need an alternative option, as well as a mix of Breton Original, Garden Vegetable and Multigrain crackers. For an added festive touch garnishing your board with pine sprigs, cinnamon sticks and cloves.
