Spring Mix Salad

A fresh, zesty and versatile salad. Serve with grilled skewers, as a side to a hearty turkey sandwich, or as a first course when entertaining.

  • 4 cups Spring Mix salad greens (or a mix of Red lettuce, Arugula, Radicchio and Frisée), washed and spun or patted dry
  • 1 cup Cherry tomatoes (a mix of red and yellow), cut into halves
  • 2 tbsp Extra virgin olive oil
  • 1 tbsp Red or white wine vinegar
  • 1 tbsp Finely chopped shallots
  • 1 tsp Dijon mustard
  • Pinch Fine sea salt & freshly ground pepper
  • 2-3 cups Boulangerie Grissol Restaurant Style Garlic & Herb Croutons


  1. In a small bowl, whisk together shallots, vinegar and mustard. Keep whisking and slowly drizzle in the oil to allow all ingredients to combine. Add a little salt and pepper to taste and set dressing aside.
  2. Add Spring Mix and tomatoes to a large bowl. Pour dressing over and toss to coat.
  3. Add croutons just before serving, toss gently and enjoy!

Pro Tip

For a little tangy richness add a ¼ cup of crumbled goat cheese just before serving.
