- 6 oz (170 g) can tomato paste
- 1 jalapeno pepper, seeded and finely chopped
- 1 small red onion, finely chopped
- 1/2 red pepper, finely chopped
- 1/2 yellow pepper, finely chopped
- 1/2 cup (125 ml) olive oil
- 1/2 cup (125 ml) red wine vinegar
- 1/3 cup (80 ml) chopped cilantro
- 1/2 tsp (2 ml) coarse ground pepper
- 1/2 tsp (2 ml) seasoned salt
- 1/4 tsp (1 ml) cayenne pepper
- cilantro (optional garnish)
- Vinta or Vivant crackers
1. In medium bowl combine all ingredients, except crackers.
2. Serve at room temperature with Vinta or Vivant crackers. Garnish with a sprig of cilantro.
Try serving this delicious salsa with slices of Monterey Jack cheese.
